Our Aging Program
ALL RIBS, STRIPS AND SHORTLOINS WHOLE OR CUT STEAKS ARE AVAILABLE FROM OUR OWN USDA INSPECTED DRY AGING FACILITY.
Aging is a process that takes the highest quality meat and makes it even more tender and full of flavor. We only use the finest cuts of USDA Prime, USDA Choice and Angus beef in our aging facility.
The meat is closely monitored in specially designed coolers where we can adjust temperature, humidity, lighting and air circulation.
During the natural aging process, enzymes break-down complex proteins in the meat to enhance tenderness and flavor.
